The law forces Big 9 allergen disclosure across every customer-facing platform — menus, kiosks, third-party delivery apps, drive-thru boards. Every single touchpoint, updated every time an ingredient changes.

Your distributor swapped your fryer oil supplier six weeks ago. The new one's processed in a facility that handles tree nuts. Your menu doesn't reflect it. Nobody told FOH. The allergen card behind the host stand still lists the old spec.

That's not a compliance gap. That's a liability event sitting in your walk-in right now.

The real margin bleed isn't the law itself. It's what happens when operators try to comply through manual tracking: printing updated menus every time a vendor subs an ingredient. Admin hours chasing spec sheets from broadliners who don't proactively disclose changes. A manager hand-updating your DoorDash listing at 11 PM because a spice blend reformulated.

Audit your core menu. Every ingredient that carries a Big 9 allergen should justify its presence. If your house vinaigrette uses a soy-based emulsifier and a soy-free alternative costs the same — cut the allergen, cut the tracking burden, and often cut food cost in the process.

Then lock your vendor contracts. Require written notification before any ingredient substitution. Shift the liability for undisclosed reformulations back to the supplier, in writing.

Most operators are going to treat this as a legal checkbox. The ones paying attention will use it to tighten their supply chain and simplify their menus. The question is whether you know what's actually in your walk-in today — or whether you're trusting a spec sheet from last quarter.
