I had dinner at Callie in San Diego last night for my birthday. What I noticed had nothing to do with the cooking.
Before I even sat down, the hostess handed me a birthday card. That set the tone for the entire night. Throughout the evening, it was clear the team knew — not because one person checked a note in the reservation system, but because the information had moved through the floor. That kind of communication doesn’t happen by accident.
The server didn’t just know the menu. She was genuinely proud of it. She spoke about each course like she had a stake in it, not because someone handed her a script but because she believed in what the kitchen was putting out. That energy doesn’t get trained into people. It gets built into a culture.
Between courses, the table was wiped down. Not at the end — between every course. The timing on each plate was paced to let the meal breathe without losing momentum. A glass of Sauternes arrived from the sommelier, unprompted.
This is what leadership on the floor actually looks like. Not a mission statement on the wall. Not a pre-shift speech about “going above and beyond.” It’s a room full of people who move with intention because someone built the culture that made them care.
